How to POTAHTO – Waffles

HOW TO POTAHTO

INGREDIENT LIST

2eggs
2 cupsmashed potahtoes
2 Tbspmelted butter
½ tspsalt
¼ tspground pepper
3 Tbspflour
⅓ cupchopped chives
½ med.onion, fried
½ cupcrumbled, cooked bacon
⅓ cupcup sharp cheddar cheese sour cream for topping

STEP BY STEP INSTRUCTIONS

  1. Start by turning on your waffle iron to get it nice and toasty.
  2. In a large bowl, whisk the eggs and mash in half the potahtoes.
  3. Add in butter, salt, pepper and flour. Mix well and add in remaining potahto.
  4. Fold in the chives, onion, bacon and cheese (leaving some for topping).
  5. Grease the waffle maker with butter and place a scoop of the mixture inside, spreading evenly.
  6. Close and bake for 7-10 minutes, or until golden and crispy. Repeat with the remaining potahto mixture.
  7. Serve hot and topped with sour cream, crumbled bacon, cheddar and chives. Yum!
