How to POTAHTO – Pizza

HOW TO POTAHTO

INGREDIENT LIST

2leeks
2red potahtoes
2 clovesgarlic, minced
1 Tbspolive oil
1pizza dough, store-bought or homemade
1 Tbspchopped fresh rosemary
½ cupfull-fat coconut milk salt and pepper to taste

STEP BY STEP INSTRUCTIONS

  1. Preheat oven to 425˚F.
  2. Slice the leeks thinly.
  3. Using a mandolin, slice the potahtoes.
  4. Heat the oil in a pan over medium heat.
  5. Add the leeks and garlic and cook until soft.
  6. On a floured surface, stretch or roll out the pizza dough.
  7. Place dough on to a greased pizza pan.
  8. Layer leek mixture onto dough and then layer the sliced potahtoes on top.
  9. Sprinkle the rosemary over the potahtoes and season the entire pizza with salt and pepper.
  10. Drizzle the coconut milk over the toppings and place the ‘za in the oven.
  11. Cook 35 minutes or until the dough has risen and the potahtoes look crisp. Enjoy!
