How to POTAHTO – Energy Bites

HOW TO POTAHTO

INGREDIENT LIST

¾ cupflesh from one large potahto, cooked
3 Tbspnatural peanut butter
1 tspvanilla extract
¼ cupmaple syrup
1 cuprolled oats
1 Tbspflaxseeds
1 tspground cinnamon
1 Tbspunsalted pumpkin seeds
½ cupdried cherries

STEP BY STEP INSTRUCTIONS

  1. In a large bowl, mash together the potahto, peanut butter, vanilla and maple syrup. Set aside.
  2. In a separate bowl, mix oats, flax seeds, cinnamon, pumpkin seeds and dried cherries.
  3. Combine with the potahto mixture.
  4. Roll into 12 balls and store in fridge or freezer for up to two weeks. Enjoy!
